Ingredients

  • 500 grams Fresh tuna steak
  • 4 large sheets Banana leaves
  • 2 tablespoons Coconut oil
  • 3 medium Red chili peppers
  • 4 medium Shallots
  • 3 cloves Garlic cloves
  • 3 pieces Candle nuts
  • 1 medium Tomatoes
  • 3 leaves Kaffir lime leaves
  • 1 teaspoon Salt
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Coriander seeds
  • 1 stalk Lemongrass stalk
  • 20 grams Fresh basil leaves
  • 200 milliliters Water

Directions

Step 1

Cut the tuna steak into medium-sized chunks (about 5 cm) and set aside.

Step 2

Using a blender or food processor, blend together the red chili peppers, shallots, garlic, candle nuts, tomatoes, kaffir lime leaves, salt, turmeric powder, and coriander seeds into a thick spice paste.

Step 3

Heat coconut oil in a pan over medium heat and sauté the spice paste until fragrant, about 5-7 minutes.

Step 4

Add in a piece of bruised lemongrass stalk and continue to sauté for an additional 2 minutes. Remove from heat.

Step 5

Mix the spice paste with the tuna pieces, ensuring all pieces are well-coated.

Step 6

Prepare the banana leaves by cutting them into squares large enough to wrap a portion of tuna. Briefly pass them over an open flame or hot dry skillet to make them pliable.

Step 7

Place a portion of the spiced tuna onto the center of a banana leaf. Top with a few fresh basil leaves and a splash of water.

Step 8

Fold the banana leaf over the tuna securely, tucking in the sides. Use a toothpick to secure the folds if necessary.

Step 9

Repeat until all tuna is wrapped in banana leaves.

Step 10

Prepare a steamer and bring the water to a boil. Place the wrapped tuna parcels in the steamer basket.

Step 11

Steam the parcels for 30 minutes or until the tuna is cooked through and flavors have melded.

Step 12

Serve immediately in the banana leaf wrap for an authentic presentation. Enjoy your Keto Pepes Tongkol!
