Ingredients

  • 1 cup Creamy natural peanut butter (unsweetened)
  • 1 cup Almond flour
  • 1/4 cup Powdered erythritol (or any keto-friendly sweetener)
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Coconut oil
  • 2 tablespoons Unsweetened cocoa powder (optional)

Directions

Step 1

In a medium bowl, combine the creamy natural peanut butter, almond flour, and powdered erythritol.

Step 2

Add the vanilla extract and mix until fully incorporated. The mixture should be thick enough to hold its shape.

Step 3

Scoop about a tablespoon of the mixture and roll it into a ball using your hands. Repeat with the remaining mixture to form about 20 balls.

Step 4

In a small microwave-safe bowl, melt the coconut oil by microwaving it for about 20 seconds.

Step 5

If using cocoa powder, stir it into the melted coconut oil until smooth, creating a chocolate coating.

Step 6

Dip each peanut butter ball into the chocolate coating, ensuring all sides are covered. Place them on a tray lined with parchment paper.

Step 7

Refrigerate the peanut butter balls for at least 30 minutes until the chocolate coating is set.

Step 8

Store the Keto Peanut Butter Balls in an airtight container in the refrigerator for up to a week.
