Ingredients

  • 200 grams Shirataki noodles
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 medium Onion, chopped
  • 1 medium Bell pepper, chopped
  • 1 small Zucchini, sliced
  • 400 grams Canned diced tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Oregano, dried
  • 1 teaspoon Basil, dried
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 50 grams Parmesan cheese, grated
  • 5 leaves Fresh basil leaves, for garnish

Directions

Step 1

Drain and rinse the shirataki noodles under cold water for 2 minutes to remove any unpleasant odor. Set aside to drain further.

Step 2

In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 3

Add the chopped onion to the skillet and sauté for 3-4 minutes until it becomes translucent.

Add the chopped bell pepper and sliced zucchini to the skillet and continue to cook for another 5 minutes until they begin to soften.

Stir in the canned diced tomatoes and tomato paste, mixing well to combine with the vegetables.

Season the sauce with dried oregano, dried basil, salt, and black pepper. Stir thoroughly and let it simmer for about 10 minutes until the sauce thickens slightly.
