Ingredients

  • 6 whole passion fruits
  • 2 tablespoons monk fruit sweetener
  • 0.5 cup water
  • 2 tablespoons unsalted butter
  • 0.25 teaspoon xanthan gum
  • 1 tablespoon lemon juice
  • 0.125 teaspoon sea salt

Directions

Step 1

Cut the passion fruits in half and scoop the pulp and seeds into a fine mesh strainer placed over a bowl. Use a spoon to press the pulp through the strainer, collecting the juice in the bowl. You should obtain about 1/2 cup of passion fruit juice.

Step 2

In a small saucepan over medium heat, combine the passion fruit juice, monk fruit sweetener, and water. Stir until the sweetener is completely dissolved.

Step 3

Add the unsalted butter to the saucepan and continue to stir until the butter is melted and well combined.

Step 4

Sprinkle the xanthan gum over the mixture, whisking continuously to prevent clumping. Continue to whisk for about 2 minutes until the sauce thickens.

Step 5

Remove the saucepan from the heat and stir in the lemon juice and sea salt.

Step 6

Allow the sauce to cool slightly. Taste and adjust the sweetness if necessary by adding more monk fruit sweetener, 1 teaspoon at a time.
