Ingredients

  • 250 grams paneer
  • 2 tablespoons olive oil
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 medium zucchini
  • 2 tablespoons soy sauce (or coconut aminos for soy-free)
  • 2 cloves garlic
  • 1 teaspoon ginger
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 stalks scallions
  • 1 tablespoon sesame seeds
  • 1 unit lime

Directions

Step 1

Cut the paneer into bite-sized cubes.

Step 2

Slice the red and green bell peppers and zucchini into thin strips.

Step 3

Mince the garlic cloves and grate the ginger.

Step 4

Heat 1 tablespoon of olive oil in a large frying pan over medium heat.

Step 5

Add the paneer cubes and sauté until golden brown on all sides, about 5-7 minutes. Remove the paneer from the pan and set aside.

Step 6

In the same pan, add the remaining 1 tablespoon of olive oil. Add minced garlic and grated ginger, and sauté for 1 minute until fragrant.

Step 7

Add the sliced bell peppers and zucchini to the pan. Stir fry for 3-4 minutes until the vegetables are tender but still crisp.

Step 8

Return the paneer to the pan and add soy sauce, salt, and black pepper. Stir well to combine all the ingredients. Cook for another 1-2 minutes, allowing the flavors to meld.

Step 9

Slice the scallions thinly and add them to the stir-fry, reserving some green parts for garnish.

Step 10

Sprinkle sesame seeds over the stir fry and toss to combine.

Step 11

Remove from heat and squeeze fresh lime juice over the top before serving.

Step 12

Serve hot and enjoy your Keto Paneer Stir Fry!
