Ingredients

  • 500 grams Chicken breast
  • 250 grams Fresh spinach leaves
  • 2 tablespoons Coconut oil
  • 1 medium Onion
  • 3 Garlic cloves
  • 1 inch Ginger
  • 2 Green chilies
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Garam masala
  • 100 milliliters Heavy cream
  • 0 to taste Salt
  • 2 tablespoons Lemon juice
  • 2 tablespoons Cilantro leaves

Directions

Step 1

Wash and pat dry the chicken breasts. Cut them into bite-sized pieces and set aside.

Step 2

Rinse the spinach leaves thoroughly and blanch them in hot water for about 2 minutes. Drain and immediately transfer them to ice-cold water to retain their green color. Puree the spinach in a blender to a smooth consistency and set aside.

Step 3

Finely chop the onion, garlic, and ginger. Slice the green chilies.

Step 4

In a large skillet, heat the coconut oil over medium heat. Once hot, add the chopped onions and sauté until translucent.

Step 5

Add the garlic, ginger, and green chilies to the skillet and continue to sauté until the raw aroma of the garlic disappears, about 2-3 minutes.

Add the turmeric powder, cumin powder, coriander powder, and salt. Stir well to mix the spices with the onion mixture.
