Wash and pat dry the chicken breasts. Cut them into bite-sized pieces and set aside.
Rinse the spinach leaves thoroughly and blanch them in hot water for about 2 minutes. Drain and immediately transfer them to ice-cold water to retain their green color. Puree the spinach in a blender to a smooth consistency and set aside.
Finely chop the onion, garlic, and ginger. Slice the green chilies.
