Ingredients

  • 500 grams ground pork
  • 2 tablespoons coconut oil
  • 4 pieces garlic cloves, minced
  • 3 pieces red bird's eye chilies, finely chopped
  • 1 medium red bell pepper, sliced into strips
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce or coconut aminos for gluten-free
  • 1 teaspoon erythritol or monk fruit sweetener
  • 2 tablespoons water
  • 1 cup Thai basil leaves, loosely packed
  • 4 pieces lime wedges, for serving

Directions

Step 1

Heat the coconut oil in a large skillet or wok over medium-high heat until shimmering.

Step 2

Add the minced garlic and chopped chilies to the pan. Stir-fry for about 30 seconds until fragrant.

Step 3

Add the ground pork to the pan. Break it up with a spatula and cook until browned, about 5-7 minutes.

Step 4

Stir in the sliced red bell pepper and sauté for 2 minutes until slightly softened.

Step 5

In a small bowl, mix together the fish sauce, soy sauce or coconut aminos, sweetener, and water.
