Ingredients

  • 4 large eggs
  • 2 tablespoons heavy cream
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 0.5 medium, finely chopped onion
  • 0.5 medium, diced tomato
  • 0.5 medium, diced red bell pepper
  • 2 tablespoons, chopped cilantro
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup, shredded cheddar cheese

Directions

Step 1

In a medium bowl, crack the eggs and add the heavy cream. Whisk together until fully combined and fluffy. Set aside.

Step 2

In a large nonstick skillet, heat the unsalted butter and olive oil over medium heat.

Step 3

Add the chopped onion to the skillet and sauté for 2-3 minutes, or until the onion becomes translucent.

Step 4

Add the diced tomato and red bell pepper to the skillet. Cook for an additional 3-4 minutes, until the vegetables are softened.

Step 5

Pour the egg and cream mixture into the skillet over the vegetables. Allow the eggs to set slightly around the edges.

Step 6

Using a spatula, gently stir the eggs, pushing them from the edges towards the center. Continue cooking and gently stirring for 2-3 minutes, until the eggs are mostly cooked but still slightly soft.

Step 7

Season with salt and black pepper, and stir in the chopped cilantro and cheddar cheese.

Step 8

Continue to cook for another minute, until the cheese is melted and the eggs are fully cooked to your liking.

Step 9

Remove from heat and serve immediately, garnishing with additional cilantro if desired.
