Ingredients

  • 1 large head Cauliflower
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 cup, shredded Cheddar cheese
  • 3 tablespoons, chopped Scallions
  • 4 slices, cooked and crumbled Bacon
  • 0.5 cup Sour cream

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Cut the cauliflower into florets. Ensure that each floret is roughly the size you desire for your 'potato' bites.

Step 3

In a large mixing bowl, combine the cauliflower florets with olive oil, garlic powder, onion powder, salt, black pepper, and paprika. Toss until the florets are evenly coated.

Step 4

Spread the coated cauliflower evenly on a baking sheet.

Step 5

Bake in the preheated oven for 25 minutes, or until the cauliflower is tender and slightly golden.

Step 6

Remove the baking sheet from the oven and sprinkle shredded cheddar cheese over the cauliflower.

Step 7

Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Step 8

Once baked, remove from the oven and transfer the cauliflower to a serving dish.

Step 9

Top the cheesy cauliflower with chopped scallions and crumbled bacon.

Step 10

Serve warm, with a dollop of sour cream on the side or on top as a garnish.
