Directions

Step 1

Preheat your oven to 425°F (220°C).

Wash and prepare the vegetables: cut the broccoli and cauliflower into bite-sized florets, slice the zucchini into rounds about 1/4-inch thick, and remove the seeds and slice the red bell pepper into strips.
