Ingredients

  • 400 grams white fish fillets
  • 100 milliliters coconut cream
  • 1 large egg
  • 2 tablespoons coconut flour
  • 2 small red chili peppers
  • 1 whole lemongrass stalk
  • 3 medium shallots
  • 2 large garlic cloves
  • 15 grams galangal
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt
  • 1 tablespoon sugar-free fish sauce
  • 6 sheets banana leaves
  • 1 tablespoon coconut oil

Directions

Step 1

Start by preparing the paste. Chop the red chili peppers, lemongrass, shallots, garlic, and galangal into small pieces.

Step 2

In a food processor, combine the chopped ingredients along with the turmeric powder and coconut cream. Blend until a smooth paste is formed.

Step 3

Cut the white fish fillets into chunks and add them to the food processor with the paste. Blend until the fish is finely mixed.

Step 4

Add the egg, coconut flour, salt, and sugar-free fish sauce to the fish mixture. Pulse everything together until combined into a thick paste.

Step 5

Preheat the grill or a grill pan to medium-high heat.

Step 6

Cut the banana leaves into rectangular pieces (about 20x20 cm). Lightly pass them over an open flame to make them more pliable.

Step 7

Place a spoonful of fish paste in the center of each banana leaf square.

Step 8

Fold the leaves to enclose the paste securely, creating packets, and fasten them with toothpicks.

Step 9

Brush the packets lightly with coconut oil.

Step 10

Grill the banana leaf-wrapped fish packets on each side for about 8-10 minutes, until the fish paste is cooked through and the leaves are charred.

Step 11

Remove from the grill and let them cool slightly before serving.

Step 12

Serve the Keto Otah warm, directly from the banana leaf to enjoy its aromatic flavors.
