  • 4 pieces (about 1-inch thick) Beef shanks
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Avocado oil
  • 1 medium, chopped Onion
  • 2 stalks, chopped Celery
  • 1 medium, chopped Carrot
  • 3 cloves, minced Garlic
  • 1 tablespoon Tomato paste
  • 1.5 cups Beef broth
  • 0.5 cup Dry white wine
  • 2 leaves Bay leaf
  • 2 teaspoons, chopped Fresh thyme
  • 2 tablespoons, chopped for garnish Fresh parsley
  • 1 teaspoon Lemon zest

Directions

Step 1

Season the beef shanks with salt and black pepper on both sides.

Step 2

Heat the avocado oil in a large, heavy pot or Dutch oven over medium-high heat.

Step 3

Sear the beef shanks in the hot oil until they are browned on both sides, about 5 minutes per side. Remove the shanks and set them aside.

In the same pot, add the chopped onion, celery, and carrot. Cook until the onion is softened, about 5 minutes.
