Ingredients

  • 4 pieces Large eggs
  • 1000 ml Cold water
  • 500 ml Boiling water
  • 60 ml Soy sauce (or tamari for gluten-free)
  • 15 ml Mirin
  • 1 tsp Dashi powder
  • 2 tbsp Green onions, finely sliced
  • 1 tsp Sesame seeds

Directions

Step 1

Fill a pot with 1000 ml of cold water and bring it to a boil.

Step 2

Once the water is boiling, remove the pot from the heat.

Step 3

Add 500 ml of boiling water to the pot to slightly lower the temperature.

Step 4

Gently add the eggs to the pot and cover with a lid.

Step 5

Let the eggs sit undisturbed in the hot water for precisely 18 minutes.

Step 6

Meanwhile, in a small bowl, mix soy sauce, mirin, and dashi powder until well combined. Set aside.

Step 7

After 18 minutes, carefully transfer the eggs to a bowl of ice water to stop the cooking process. Let them cool for at least 5 minutes.

Step 8

Peel the eggs gently to maintain their soft texture.

Step 9

In a serving bowl, place an Onsen egg and drizzle the soy sauce mixture over it.

Step 10

Garnish with finely sliced green onions and a sprinkle of sesame seeds before serving.
