Ingredients

  • 2 Large onions
  • 1 cup Almond flour
  • 0.25 cup Coconut flour
  • 1 tbsp Psyllium husk
  • 0.5 tsp Salt
  • 0.5 tsp Chili powder
  • 0.25 tsp Turmeric powder
  • 0.5 tsp Cumin seeds
  • 0.5 cup Water
  • 0.5 cup Coconut oil or avocado oil
  • 2 tbsp Fresh cilantro, chopped

Directions

Step 1

Peel the onions and slice them into uniform rings about 1/4 inch thick.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, psyllium husk, salt, chili powder, turmeric powder, and cumin seeds.

Step 3

Gradually add water to the dry mixture, stirring constantly until a smooth, thick batter forms. It should be thick enough to coat the back of a spoon.

Step 4

Fold in the chopped cilantro to the batter.

Step 5

Dip each onion ring into the batter, ensuring it is thoroughly coated.

Step 6

Heat coconut oil or avocado oil in a deep frying pan over medium heat.

Step 7

Once the oil is hot, carefully place the battered onion rings into the oil, a few at a time, making sure not to overcrowd the pan.

Step 8

Fry each side for 2-3 minutes or until the onion baji turns golden brown and crispy. Adjust the heat as needed to prevent burning.

Step 9

Use a slotted spoon to remove the bajjis from the oil and place them on a paper towel-lined plate to drain excess oil.

Step 10

Serve hot with your favorite keto-friendly dipping sauce.
