Ingredients

  • 1 cup Raw almonds
  • 1 cup Raw walnuts
  • 1 cup Raw pecans
  • 0.5 cup Raw sunflower seeds
  • 0.5 cup Raw pumpkin seeds
  • 0.5 cup Unsweetened coconut flakes
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 0.25 cup Coconut oil, melted
  • 2 tablespoons Erythritol sweetener

Directions

Step 1

Preheat the oven to 325°F (160°C). Line a baking sheet with parchment paper.

Step 2

In a food processor, pulse the almonds, walnuts, and pecans until they are roughly chopped. Be careful not to over-process; you want small pieces, not a fine meal.

Step 3

Transfer the chopped nuts to a large mixing bowl. Add the sunflower seeds, pumpkin seeds, and coconut flakes. Stir to combine.
