Ingredients

  • 1 cup Raw almonds
  • 1 cup Raw walnuts
  • 1 cup Pecans
  • 0.5 cup Raw pumpkin seeds
  • 0.5 cup Unsweetened coconut flakes
  • 2 tablespoons Golden flaxseeds
  • 2 tablespoons Chia seeds
  • 2 tablespoons Coconut oil
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Cinnamon powder
  • 0.5 teaspoon Salt
  • 3 tablespoons Erythritol or sweetener of choice

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the almonds, walnuts, and pecans. Chop them roughly for a more even texture.

Step 3

Add the pumpkin seeds, coconut flakes, flaxseeds, and chia seeds to the bowl of chopped nuts, mixing well.

Step 4

In a small saucepan over low heat, melt the coconut oil. Once melted, remove from heat and stir in the vanilla extract, cinnamon powder, salt, and erythritol until thoroughly combined.

Step 5

Pour the coconut oil mixture over the nut and seed mix, stirring until fully coated.

Step 6

Spread the mixture evenly on the prepared baking sheet, forming a thin layer.

Step 7

Bake in the preheated oven for 18-20 minutes, stirring once midway through, until the nuts are golden brown and fragrant.

Step 8

Remove from the oven and allow to cool completely on the baking sheet to let the mixture harden and become crispy.

Step 9

Once cooled, break into pieces and store in an airtight container. Enjoy as a crunchy snack or topping for yogurt and salads.
