Ingredients

  • 1.5 cups Almond flour
  • 0.5 cups Unsalted butter
  • 0.5 cups Erythritol sweetener
  • 1 teaspoon Vanilla extract
  • 0.5 cups Chopped hazelnuts
  • 1 cup Sugar-free chocolate chips
  • 2 tablespoons Coconut oil
  • 2 tablespoons Unsweetened cocoa powder
  • 0.25 cup Full fat coconut cream

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.

Step 2

In a medium saucepan over medium heat, melt the unsalted butter. Remove from the heat and mix in the almond flour, erythritol sweetener, and vanilla extract until a crumbly dough forms.

Step 3

Press the almond flour mixture evenly into the bottom of the prepared baking dish to create the base layer.

Step 4

Bake in the preheated oven for 10-12 minutes until slightly golden. Remove from oven and let it cool completely.

Step 5

In a bowl, mix the chocolate chips and coconut oil. Microwave at 30-second intervals, stirring between each, until completely melted and smooth.

Add the unsweetened cocoa powder and coconut cream to the chocolate mixture, stirring until well combined and smooth.

Step 7

Pour the chocolate mixture over the cooled almond flour base and spread it evenly with a spatula.

Sprinkle the chopped hazelnuts on top of the chocolate layer, pressing them lightly into the chocolate.

Refrigerate the bars for at least 1 hour or until fully set.

Once set, remove from the baking dish and cut into 12 bars. Store the bars in an airtight container in the refrigerator for up to one week.
