Ingredients

  • 150 g Almond flour
  • 1 tbsp Psyllium husk powder
  • 1 tsp Baking powder
  • 0.5 tsp Salt
  • 2 large Eggs
  • 60 g Unsalted butter
  • 100 g Cream cheese
  • 150 g Mozzarella cheese
  • 100 g Chopped walnuts
  • 2 tbsp Erythritol sweetener
  • 1 tsp Cinnamon
  • 1 tsp Vanilla extract

Directions

Step 1

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a large bowl, combine almond flour, psyllium husk powder, baking powder, and salt.

Step 3

In a microwave-safe bowl, combine the cream cheese and mozzarella cheese. Microwave on high for about 1-2 minutes until melted then stir to combine.

Add the melted cheese mixture to the dry ingredients along with the eggs. Mix well until a dough forms. If the dough is too sticky, add a bit more almond flour.

Step 5

Roll the dough out between two sheets of parchment paper into a rectangle roughly 30x20 cm in size.

In a small bowl, mix chopped walnuts, erythritol sweetener, cinnamon, and vanilla extract together.

Spread the walnut mixture over the dough evenly.

Step 8

Cut the dough into triangles (like slicing a pizza). You should aim for 8 triangles.

Step 9

Starting from the wide end, roll each triangle towards the tip to create a crescent shape.

Place the crescents on the prepared baking sheet and bake for 12-15 minutes or until golden brown.

Remove from the oven and allow to cool slightly on a rack before serving.
