Ingredients

  • 150 grams Almond flour
  • 30 grams Coconut flour
  • 10 grams Psyllium husk powder
  • 5 grams Baking powder
  • 2 grams Salt
  • 100 grams Butter
  • 3 Eggs, large
  • 100 grams Cream cheese
  • 50 grams Erythritol
  • 5 ml Vanilla extract
  • 100 grams Ground walnuts
  • 2 grams Ground cinnamon
  • 30 ml Almond milk, unsweetened

Directions

Step 1

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the almond flour, coconut flour, psyllium husk powder, baking powder, and salt.

Step 3

In a saucepan over low heat, melt the butter and cream cheese, stirring until smooth. Remove from heat.

Add the melted butter and cream cheese mixture to the dry ingredients. Crack in two of the eggs, and mix until a dough forms.

Roll the dough into a ball, wrap it in plastic wrap, and refrigerate for 15 minutes to firm up.
