Ingredients

  • 1.5 cups Almond flour
  • 0.25 cup Coconut flour
  • 3 large Eggs
  • 4 tablespoons Cream cheese
  • 1 tablespoon Psyllium husk powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 cup Water
  • 2 tablespoons Butter (optional, for serving)

Directions

Step 1

In a mixing bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, and salt. Mix well to ensure there are no lumps.

Step 2

In a separate bowl, beat the eggs lightly with a fork. Add cream cheese to the eggs and whisk until smooth.

Step 3

Slowly combine the dry ingredients with the egg and cream cheese mixture. Mix until it forms a thick and sticky dough.

Step 4

Let the dough rest for 5 minutes to allow the psyllium husk powder to hydrate and the dough to firm up slightly.

Step 5

Bring a large pot of water to a rolling boil. Add the water to the dough mixture, a little at a time, to thin the dough just enough to be able to spoon it into boiling water smoothly.

Step 6

Using a small spoon or a nokedli maker, drop small portions of the dough into the boiling water. Ensure the dumplings are not overcrowded in the pot.

Step 7

Boil the dumplings for about 2-3 minutes or until they float to the surface and look firm.

Step 8

Using a slotted spoon, remove the dumplings from the water and let them drain on a paper towel.

Step 9

If desired, melt butter in a pan and lightly toss the dumplings to coat them before serving.

Step 10

Serve hot as a side dish or add to your favorite Keto-friendly stew or soup.
