Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Coconut flour
  • 1 tablespoon Psyllium husk powder
  • 1 teaspoon Baking powder
  • 1 tablespoon Erythritol (granulated sweetener)
  • 0.25 teaspoon Salt
  • 2 Eggs
  • 0.25 cup Unsweetened almond milk
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Butter (melted)
  • 1 cup Coconut oil (for frying)

Directions

Step 1

In a large bowl, whisk together almond flour, coconut flour, psyllium husk powder, baking powder, erythritol, and salt.

Step 2

In a separate bowl, beat the eggs and then mix in almond milk and vanilla extract.

Step 3

Combine the wet and dry ingredients, then stir in the melted butter until a smooth batter forms. The batter should be thick but still slightly pourable.

Step 4

Heat the coconut oil in a deep pan or skillet over medium heat, making sure the oil is at least 2 inches deep.

Step 5

Once the oil is hot (test by dropping a small piece of batter in; it should sizzle and rise to the surface), use a small cookie scoop or tablespoon to drop portions of the batter into the hot oil.

Step 6

Fry the puff-puff balls in batches, turning them occasionally, until they are golden brown on all sides, about 3-4 minutes per batch.

Step 7

Remove the puff-puff from the oil and drain on a paper towel-lined plate.

Step 8

Allow to cool slightly before serving warm, optionally dusted with extra erythritol.
