Ingredients

  • 500 grams Goat meat (or chicken/beef)
  • 200 grams Catfish (cleaned and cut into pieces)
  • 2 tablespoons Nigerian pepper soup spice mix
  • 2 whole Scotch bonnet peppers
  • 1 tablespoon Fresh ginger
  • 3 whole Garlic cloves
  • 1 medium Onion
  • 10 grams Fresh basil leaves
  • 2 cubes Bouillon cubes
  • 1000 milliliters Water
  • 1 teaspoon Salt

Directions

Step 1

Wash and cut the goat meat into bite-sized pieces. You can use a preferred mix of meat such as chicken or beef.

Step 2

In a large pot, add the goat meat and cover with water. Season with salt and one bouillon cube.

Step 3

Peel and crush the ginger and garlic cloves, then add into the pot along with the meat.

Step 4

Chop the onion and add to the pot. Bring the pot to a boil over medium-high heat.

Step 5

Reduce the heat to a simmer and cook the meat for about 30 minutes until tender.

Step 6

Add the catfish pieces to the pot along with the second bouillon cube, Scotch bonnet peppers, and pepper soup spice mix.

Step 7

Pour in the remaining water, stir well, and allow the soup to simmer for another 20 minutes.

Step 8

Taste and adjust the seasoning with salt if needed.

Chop the fresh basil leaves and add to the pot. Simmer for an additional 5-10 minutes to let the flavors meld together.

Remove from heat and let the soup rest for a few minutes before serving. This allows the spices to fully infuse the soup.
