Ingredients

  • 1 medium head Cauliflower
  • 2 tablespoons Coconut oil
  • 2 medium, finely chopped Shallots
  • 3 cloves, minced Garlic
  • 1 inch, peeled and grated Galangal
  • 1 teaspoon Turmeric powder
  • 0.5 cup Coconut milk
  • 2 Kaffir lime leaves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 small, sliced (for garnish) Cucumber
  • 2 quartered (for garnish) Boiled eggs

Directions

Step 1

Cut the cauliflower into florets and pulse them in a food processor until they resemble rice grains. Set aside.

Step 2

Heat coconut oil in a large pan over medium heat.

Step 3

Add the chopped shallots and minced garlic to the pan. Sauté until they become fragrant and translucent.

Step 4

Stir in the grated galangal and turmeric powder, cooking for another 2 minutes to release their flavors.

Add the cauliflower 'rice' to the pan, stirring well to coat it with the aromatic mixture.

Pour in the coconut milk, mixing until combined.
