  • 1 medium Green bell pepper, diced
  • 2 tsp Chili powder
  • 1 tsp Cumin
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 3 Roma tomatoes, diced
  • 3 cups Romaine lettuce, shredded
  • 1 large Avocado, sliced
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Sour cream
  • 0.25 cup Fresh cilantro, chopped
  • 1 optional Jalapeño, sliced

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.

Step 2

Add the minced garlic and continue to sauté for another 1 minute until fragrant.

Step 3

Add the ground beef to the skillet and cook, breaking it apart with a spatula, until browned and cooked through, about 8-10 minutes.

Step 4

Drain any excess fat and return the skillet to the stove. Stir in the chili powder, cumin, salt, and black pepper.

Step 5

Add the diced red and green bell peppers to the skillet and cook for an additional 4-5 minutes until the peppers are tender.

Step 6

In a separate pan, heat the remaining 1 tablespoon of olive oil and sauté the diced tomatoes until slightly softened, about 2-3 minutes, then set aside.

Step 7

To assemble the keto naked burritos, divide the shredded romaine lettuce evenly among four bowls as the base.

Step 8

Top each bowl with an equal amount of the cooked beef mixture, sautéed tomatoes, slices of avocado, and shredded cheddar cheese.

Step 9

Finish with a dollop of sour cream, a sprinkle of chopped cilantro, and jalapeño slices if desired.

Step 10

Serve immediately and enjoy your flavorful keto-friendly naked burrito!
