Ingredients

  • 1 cup Almond Flour
  • 1 cup Granulated Erythritol
  • 1 cup Ghee
  • 0.25 cup Water
  • 0.5 teaspoon Cardamom Powder

Directions

Step 1

Grease an 8x8 inch square pan with a little ghee and set aside.

Step 2

In a saucepan over medium-low heat, melt 1 cup of ghee. Once melted, keep it warm on a low flame.

Step 3

In another pan, roast the almond flour on low heat for about 4-5 minutes until aromatic, being careful not to burn it. Transfer to a plate and set aside.

Step 4

In a deep non-stick pan, combine the granulated erythritol and water, stirring over medium heat until the erythritol dissolves completely.

Step 5

Continue to cook the erythritol syrup until it reaches one-string consistency, which takes about 5-6 minutes. To test, place a drop of syrup between your fingers and stretch; it should form a string.

Reduce the heat to low and add the roasted almond flour to the syrup, stirring continuously to avoid lumps.

Step 7

Gradually add the warm ghee to the flour-syrup mixture, each time fully incorporating it before adding more. Continue this process for about 10 minutes on low heat.

Step 8

Add the cardamom powder and continue to cook while stirring consistently. The mixture will start leaving the sides of the pan and form a thick mass.

Step 9

Pour the mixture into the greased pan and smooth out the top with a spatula. Allow it to cool slightly for 5-10 minutes.

While still warm, cut into squares or diamonds using a sharp knife.

Allow the Keto Mysore Pak to cool completely, then remove from the pan and store in an airtight container.
