Ingredients

  • 1 cup Almond flour
  • 1 cup Grated zucchini
  • 0.5 cup Grated cabbage
  • 0.25 cup Grated carrot
  • 1 tablespoon Ginger paste
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Cumin seeds
  • 1 tablespoon Sesame seeds
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Salt
  • 2 tablespoons Cilantro, chopped
  • 1 tablespoon Lemon juice
  • 2 tablespoons Coconut oil
  • 0.5 teaspoon Baking soda
  • 2 tablespoons Water

Directions

Step 1

In a large mixing bowl, combine almond flour, grated zucchini, cabbage, carrot, ginger paste, turmeric powder, red chili powder, salt, and cilantro. Mix well to combine all the ingredients.

Step 2

Add lemon juice, baking soda, and 2 tablespoons of water to the mixture. Mix thoroughly until you achieve a dough-like consistency.

Step 3

Divide the dough into 8 equal parts and shape each portion into a cylindrical log.

Step 4

Place a steamer pan on medium heat with enough water in the bottom to steam. Allow the water to come to a boil.

Step 5

Grease a steamer plate with a little coconut oil to prevent sticking. Place the shaped logs onto the greased plate and steam for about 15 minutes on medium heat.

Step 6

Once the muthiyas are fully cooked (they should be firm to the touch), remove them from the steamer and allow them to cool for a few minutes.

Step 7

Heat coconut oil in a non-stick pan over medium heat. Add cumin seeds and sesame seeds and let them crackle.

Step 8

Add the steamed muthiyas to the pan and gently sauté them until they turn light golden brown on all sides.

Step 9

Serve hot with a side of mint chutney or yogurt for a perfect keto-friendly snack.
