Ingredients

  • 450 grams Frozen mulukhiyah (jute leaves)
  • 500 grams Chicken breast
  • 2 tablespoons Olive oil
  • 4 pieces Garlic cloves
  • 1 medium Onion
  • 4 cups Chicken broth
  • 1 teaspoon Ground coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Lemon juice
  • 0.25 teaspoon Cayenne pepper (optional)

Directions

Step 1

Thaw the frozen mulukhiyah leaves by placing them in a bowl at room temperature for about 30 minutes.

Step 2

While the mulukhiyah is thawing, cut the chicken breast into bite-sized pieces.

Step 3

Finely chop the onion and garlic cloves.

Step 4

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent.

Step 5

Add the chicken pieces to the pot and cook until they are lightly browned on all sides, about 5-7 minutes.

Step 6

Pour in the chicken broth and bring the mixture to a gentle boil.

Step 7

Add the ground coriander, salt, black pepper, and optional cayenne pepper to the pot. Stir well to combine the spices.

Step 8

Reduce the heat and gently stir in the thawed mulukhiyah leaves. Cover the pot and let it simmer for about 20 minutes until the leaves are tender.

Step 9

Squeeze in the lemon juice and stir to distribute it throughout the soup.

Step 10

Taste and adjust seasoning if necessary.

Step 11

Serve the Keto Mulukhiyah hot in bowls, optionally garnished with additional lemon wedges.
