Ingredients

  • 1 large head Cauliflower
  • 2 tablespoons Olive oil
  • 3 large Garlic cloves
  • 1 cup Pork rinds
  • 0.25 cup Chicken broth
  • 2 tablespoons Fresh cilantro
  • 1 tablespoon Lime juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Cooked bacon, chopped
  • 1 pound Shrimp, peeled and deveined

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Chop the cauliflower into florets. Toss with 1 tablespoon olive oil, salt, and pepper.

Step 3

Spread the cauliflower on a baking sheet. Roast in the oven for about 15-20 minutes, or until tender and lightly browned.

Step 4

While the cauliflower is roasting, crush the pork rinds in a food processor until they resemble coarse crumbs and set aside.

Step 5

In a skillet over medium heat, heat the remaining 1 tablespoon of olive oil. Add minced garlic and sauté until fragrant but not burnt, about 1 minute.

Add the peeled and deveined shrimp to the pan and cook for 2-3 minutes on each side until they turn pink and opaque. Remove shrimp and set aside.

Once the cauliflower is done, place it in a bowl and mash with a potato masher or fork.
