Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Psyllium husk powder
  • 2 tablespoons Coconut flour
  • 0.25 cup Erythritol sweetener
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 1 Egg
  • 0.5 cup Unsweetened almond milk
  • 1 teaspoon Vanilla extract
  • 0.25 cup Unsalted butter

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the almond flour, psyllium husk powder, coconut flour, erythritol, baking powder, and salt. Stir until well mixed.

Step 3

In a separate bowl, lightly whisk the egg. Then add the almond milk and vanilla extract, mixing until fully combined.

Step 4

Melt the unsalted butter in a small saucepan over low heat or in the microwave. Add the melted butter to the wet ingredients and stir well.

Step 5

Pour the wet ingredients into the dry ingredients and mix until a dough forms. The dough should be cohesive and slightly sticky.

Step 6

Use your hands to shape the dough into small balls, about the size of a ping pong ball. You should have around 10 mochi balls.

Step 7

Place the mochi balls onto the prepared baking sheet, leaving some space between each one.

Step 8

Bake in the preheated oven for 12-15 minutes, or until they are firm to the touch and lightly golden on top.

Step 9

Allow the mochi balls to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Enjoy these keto-friendly mochi balls as a snack or dessert!
