Ingredients

  • 200 grams Cauliflower florets
  • 1 medium, chopped Zucchini
  • 1 medium, chopped Bell pepper
  • 100 grams Spinach leaves
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 1 tablespoon Ginger-garlic paste
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Salt
  • 2 tablespoons, chopped Fresh cilantro
  • 1 tablespoon Lemon juice

Directions

Step 1

Heat the olive oil in a large pan over medium heat.

Step 2

Add cumin seeds and mustard seeds to the oil; let them splutter for about 30 seconds.

Step 3

Stir in the ginger-garlic paste and sauté for 1-2 minutes until the raw aroma disappears.

Step 4

Add the chopped cauliflower, zucchini, and bell pepper to the pan. Stir well.

Step 5

Sprinkle turmeric powder, red chili powder, coriander powder, and salt over the vegetables. Mix everything thoroughly.

Step 6

Cover the pan and cook for 10 minutes, stirring occasionally to prevent the vegetables from sticking to the pan.

Step 7

Add the spinach leaves and garam masala to the pan. Mix and cover again. Cook for an additional 5-7 minutes until all the vegetables are tender but not mushy.

Step 8

Turn off the heat and add lemon juice. Mix well.

Step 9

Garnish with freshly chopped cilantro before serving.
