Ingredients

  • 2 cups mixed berries (fresh or frozen, unsweetened)
  • 2 tablespoons lemon juice
  • 0.5 teaspoon lemon zest
  • 0.25 cup erythritol sweetener
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon xanthan gum
  • 0.25 cup water

Directions

Step 1

In a medium-sized saucepan, combine the mixed berries, lemon juice, lemon zest, and water.

Step 2

Place the saucepan over medium heat and cook for about 5 minutes, stirring occasionally until the berries have softened and released their juices.

Step 3

Add the erythritol sweetener to the saucepan, stirring to dissolve. Continue to cook the mixture for an additional 2 minutes.

Step 4

Remove the saucepan from the heat and gently mash the berries with a fork or potato masher to your desired consistency, leaving some chunks for texture.

Step 5

Sprinkle the xanthan gum over the berry mixture and whisk briskly to avoid any lumps and to achieve a smooth consistency.

Step 6

Stir in the vanilla extract to enhance the flavor of the sauce.

Step 7

Return the saucepan to low heat and simmer for 2-3 more minutes, stirring constantly until the sauce thickens to your preference.

Step 8

Remove the sauce from the heat and allow it to cool. The sauce will continue to thicken as it cools.

Step 9

Transfer the cooled berry sauce to a serving dish or airtight container and refrigerate until ready to use. It will keep well in the refrigerator for up to 5 days.
