Ingredients

  • 450 grams Mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 75 grams Erythritol
  • 2 tablespoons Lemon juice
  • 3 tablespoons Chia seeds
  • 1 teaspoon Vanilla extract

Directions

Step 1

Wash and hull the berries if needed, especially strawberries. Pat them dry with a kitchen towel.

Step 2

Place the mixed berries in a medium-sized saucepan over medium heat. Stir occasionally to prevent sticking.

Step 3

As the berries heat up, they will release their juices. Use a masher to gently smash the berries to your desired consistency.

Step 4

Add the erythritol and lemon juice to the berry mixture, stirring continuously until the erythritol dissolves completely.

Step 5

Allow the mixture to come to a gentle boil, then reduce the heat to low and simmer for about 10 minutes, stirring frequently.

Step 6

Remove the saucepan from heat and stir in the chia seeds and vanilla extract thoroughly.

Step 7

Let the jam cool slightly, as it cools, the chia seeds will thicken the mixture to a jam-like consistency.

Step 8

Transfer the jam to sterilized jars and allow it to cool completely before sealing with lids.

Step 9

Store the jam in the refrigerator and use within two weeks, or freeze for longer storage.
