Ingredients

  • 3 pounds Beef chuck roast
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 4 tablespoons Butter
  • 1 cup Beef broth
  • 6 whole Pepperoncini peppers
  • 0.25 cup Pepperoncini juice

Directions

Step 1

Start by seasoning the beef chuck roast with salt, black pepper, garlic powder, and onion powder on all sides.

Step 2

In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once hot, add the seasoned roast and sear it on each side until browned, about 4-5 minutes per side.

Step 3

Transfer the seared roast to a slow cooker.

Step 4

Pour the beef broth and pepperoncini juice over the roast in the slow cooker.

Step 5

Add the pepperoncini peppers around the roast.

Step 6

Place the remaining 2 tablespoons of butter on top of the roast.

Cover the slow cooker and set it to low heat.

Cook for 8 hours or until the beef is very tender and easy to shred with a fork.

Once done, remove the roast from the slow cooker and shred with two forks.
