Ingredients

  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 2 tablespoons erythritol
  • 0.25 teaspoon salt
  • 0.5 cup unsweetened almond milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • 2 tablespoons coconut oil, for cooking

Directions

Step 1

In a medium mixing bowl, combine the almond flour, coconut flour, baking powder, erythritol, and salt.

Step 2

In a separate bowl, whisk together the almond milk, eggs, vanilla extract, and melted butter until well combined.

Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix. Let the batter sit for a few minutes to thicken.
