Ingredients

  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 0.5 cup erythritol sweetener
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 4 whole large eggs
  • 0.25 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 0.25 cup heavy cream
  • 1 teaspoon cinnamon
  • 0.25 teaspoon ground nutmeg

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a mini donut pan with non-stick spray or butter.

Step 2

In a large bowl, combine almond flour, coconut flour, erythritol, baking powder, salt, cinnamon, and nutmeg. Whisk together until well combined.

Step 3

In a separate bowl, beat the eggs until frothy. Add the melted butter, vanilla extract, and heavy cream. Mix until incorporated.

Step 4

Pour the wet ingredients into the dry ingredients and stir until just combined and smooth.

Step 5

Transfer the batter into a piping bag or a Ziploc bag with the tip cut off. Pipe the batter into the prepared mini donut pan, filling each cavity about 3/4 full.

Bake in the preheated oven for 12-15 minutes, or until the donuts are firm to the touch and a toothpick inserted into the center comes out clean.

Step 7
