Ingredients

  • 1.5 cups Almond flour
  • 0.25 cup Coconut flour
  • 0.25 cup Unsalted butter
  • 0.5 teaspoons Xanthan gum
  • 0.25 cup Granulated erythritol
  • 1 large Egg
  • 1 teaspoon Cinnamon
  • 2 medium Chayote squash
  • 2 tablespoons Butter
  • 1 tablespoon Ground cinnamon
  • 0.25 teaspoon Nutmeg
  • 10 drops Liquid stevia
  • 1 tablespoon Fresh lemon juice

Directions

Step 1

Preheat the oven to 350°F (175°C) and lightly grease a muffin tin.

Step 2

In a medium bowl, combine almond flour, coconut flour, granular erythritol, xanthan gum, and cinnamon. Mix well.

Step 3

Melt the butter and add it to the dry ingredients. Mix until crumbly.

Step 4

Add the beaten egg into the flour mixture and mix until dough forms.

Step 5

Divide the dough into six equal portions and press each portion into the bottom and up the sides of the muffin cups, creating a mini crust. Set aside.

Peel and core the chayote squash. Chop into small pieces resembling apple chunks.

In a skillet over medium heat, melt butter and add the chayote pieces.
