Ingredients

  • 500 grams Ground beef or pork
  • 2 tablespoons Coconut oil
  • 3 cloves Garlic clove, minced
  • 1 teaspoon Ginger, grated
  • 1 medium Red bell pepper, sliced
  • 1 medium Zucchini, sliced
  • 3 tablespoons Soy sauce or tamari
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 stalks Green onions, chopped
  • 1 tablespoon Sesame seeds
  • 2 tablespoons Cilantro, chopped

Directions

Step 1

Heat the coconut oil in a large frying pan or wok over medium-high heat.

Step 2

Add the minced garlic and grated ginger, stirring for about 1 minute until fragrant.

Step 3

Increase the heat to high and add the ground meat, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.

Step 4

Add the sliced red bell pepper and zucchini to the pan. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.

Step 5
