Ingredients

  • 2 medium zucchini
  • 0.5 pound chicken breast
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 0.5 medium onion
  • 3 garlic cloves
  • 1 inch piece ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 cups, chopped bok choy
  • 2 green onions
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Using a spiralizer, create zucchini noodles (zoodles) from the zucchini and set them aside.

Step 2

Dice the onion and mince the garlic and ginger.

Step 3

Cut the chicken breast into thin strips.

Step 4

In a large pot, heat olive oil over medium heat. Add the onion, garlic, and ginger, and sauté until the onion is translucent, about 5 minutes.

Add the chicken strips to the pot and cook until they start to brown, about 5 minutes.
