Ingredients

  • 3 medium Zucchini
  • 500 grams Ground pork
  • 2 tablespoons Coconut oil
  • 3 cloves Garlic
  • 1 inch Ginger
  • 3 tablespoons Soy sauce
  • 2 tablespoons Hoisin sauce, sugar-free
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sesame oil
  • 3 stalks Green onions
  • 0.5 teaspoon Red pepper flakes
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Water
  • 1 tablespoon Toasted sesame seeds

Directions

Step 1

Using a spiralizer, create zucchini noodles from the 3 medium zucchinis and set aside.

Step 2

Mince the garlic cloves and ginger. Chop the green onions, separating the white and green parts.

Step 3

In a large skillet, heat the coconut oil over medium-high heat.

Step 4

Add the ground pork to the skillet and cook until browned, about 5-7 minutes. Break the pork into smaller pieces as it cooks.
