Ingredients

  • 4 large Bell peppers
  • 2 tablespoons Olive oil
  • 1 pound Ground turkey
  • 1 small, diced Onion
  • 3 minced Garlic cloves
  • 2 cups Cauliflower rice
  • 1 cup, halved Cherry tomatoes
  • 0.5 cup, pitted and sliced Kalamata olives
  • 1 cup, crumbled Feta cheese
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup, chopped Parsley
  • 2 tablespoons Lemon juice

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Slice the tops off the bell peppers and remove the seeds and membranes. Arrange them upright in a baking dish.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground turkey and cook, breaking it apart with a wooden spoon, until browned, about 5-7 minutes.

Step 4

Remove the turkey from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil and sauté the onion and garlic until softened, about 3-4 minutes.

Step 5

Stir in the cauliflower rice and cook for an additional 5 minutes, until the cauliflower is tender.

Step 6

Return the cooked turkey to the skillet and add the cherry tomatoes, kalamata olives, feta cheese, oregano, salt, and black pepper. Stir to combine.

Step 7

Remove the mixture from heat and stir in the parsley and lemon juice.

Spoon the turkey mixture evenly into each hollowed-out bell pepper.

Step 9

Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the peppers are tender.
