Ingredients

  • 1 cup Almond flour
  • 0.25 cup Coconut flour
  • 1 tablespoon Psyllium husk
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Carom seeds (ajwain)
  • 0.5 teaspoon Salt
  • 0.25 cup Ghee (melted)
  • 0.5 cup Water
  • 0 as needed Oil for frying

Directions

Step 1

In a mixing bowl, combine almond flour, coconut flour, psyllium husk, ground cumin, carom seeds, and salt. Mix well to incorporate all the dry ingredients.

Step 2

Add the melted ghee to the dry ingredients. Rub it into the flour mixture using your fingertips until it resembles a coarse crumbly texture.

Step 3

Gradually add water, a little at a time, and knead the mixture into a firm dough. You should aim for a consistency similar to traditional mathri dough.

Step 4

Divide the dough into small, equal portions and roll them into balls. Flatten each ball with your palm to form a small disc about 1/4 inch thick.

Step 5

Use a fork to prick holes in each disc; this helps the mathris cook evenly and prevents them from puffing up.

Step 6

Heat oil in a deep frying pan over medium heat. Once hot, reduce the flame to low-medium and carefully slide in a few mathris, ensuring not to overcrowd the pan.

Step 7

Fry on low-medium heat until they turn golden brown and crisp, flipping occasionally to ensure even cooking. This should take about 7-8 minutes per batch.

Step 8

Remove the mathris from the oil and drain them on a paper towel to remove excess oil.

Step 9

Repeat the frying process for the remaining mathris.

Step 10

Allow them to cool completely before serving or storing them in an airtight container.
