Ingredients

  • 1 large head cauliflower
  • 1 medium head broccoli
  • 4 ounces cream cheese
  • 4 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup heavy cream
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons fresh chives

Directions

Step 1

Rinse the cauliflower and broccoli under cold water. Cut the cauliflower into florets and the broccoli into smaller florets.

Step 2

Bring a large pot of water to a boil. Add the cauliflower florets and cook for about 10 minutes, until soft and tender.

Step 3

Remove the cauliflower using a slotted spoon and place in a colander to drain. Add the broccoli to the same boiling water and cook for 4-5 minutes until bright green and tender. Drain and set aside.

Step 4

In a large mixing bowl, combine the drained cauliflower, cream cheese, unsalted butter, garlic powder, salt, black pepper, and heavy cream.

Step 5

Using an immersion blender or stand blender, blend until the mixture is smooth and has a mashed potato consistency.

Step 6

Add the cooked broccoli to the cauliflower mixture. Blend briefly, allowing the broccoli to break down slightly but still maintaining some texture.

Step 7

Stir in the grated Parmesan cheese until well combined.

Step 8

Transfer the mixture to a serving dish and sprinkle with fresh chives.

Step 9

Serve hot as a comforting, keto-friendly side dish.
