  • 1 whole Cauliflower, large head
  • 4 tablespoons Butter
  • 0.25 cup Heavy cream
  • 0.5 teaspoons Garlic powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Olive oil
  • 0.5 whole Onion, small, chopped
  • 1 cup Beef broth, low sodium
  • 0.5 teaspoons Xanthan gum
  • 1 teaspoon Worcestershire sauce

Directions

Step 1

Begin by cutting the cauliflower into medium-sized florets and dispose of the leaves and stem.

Step 2

Bring a large pot of water to a boil over medium-high heat. Add the cauliflower florets and cook for about 10-12 minutes or until tender. Drain the cauliflower thoroughly and set aside.

Step 3

In a food processor or blender, combine the cooked cauliflower, 2 tablespoons of butter, heavy cream, garlic powder, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste and set aside.
