Ingredients

  • 1 cup Almond flour
  • 0.25 cup Chickpea flour
  • 0.25 cup Coconut flour
  • 1 medium Onion, finely chopped
  • 2 Green chilies, finely chopped
  • 1 teaspoon Ginger, grated
  • 10 leaves Curry leaves, chopped
  • 0.25 cup Coriander leaves, chopped
  • 0.5 teaspoon Red chili powder
  • 0.25 teaspoon Turmeric powder
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Salt
  • 0.5 cup Water
  • 1 cup Coconut oil, for frying

Directions

Step 1

In a large mixing bowl, combine the almond flour, chickpea flour, and coconut flour.

Step 2

Add the finely chopped onion, green chilies, grated ginger, chopped curry leaves, and coriander leaves to the dry ingredients.

Step 3

Sprinkle in the red chili powder, turmeric powder, cumin seeds, and salt. Mix everything well to incorporate the spices into the flour.

Step 4

Gradually add water to the mixture, a little at a time, while stirring continuously. The mixture should bind together enough to form small patties, but not too wet.

Step 5

Once the dough has reached the right consistency, allow it to rest for a few minutes while you heat the oil.

Step 6

In a frying pan, heat the coconut oil over medium heat. Make sure the oil is hot before you start frying. To test, drop a small piece of the mixture into the oil; if it sizzles and rises to the top, the oil is ready.

Take small portions of the dough and flatten them to form small patties, about 2 inches in diameter and 1/2 inch thick.

Carefully slide the patties into the hot oil, frying in batches. Do not overcrowd the pan.

Using a slotted spoon, remove the vadas from the oil and let them drain on paper towels to remove excess oil.
