Ingredients

  • 1 medium head Cauliflower
  • 2 tablespoons Coconut oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 medium, finely chopped Onion
  • 1 tablespoon Ginger garlic paste
  • 1 finely chopped Green chili
  • 1 medium, chopped Tomato
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Garam masala
  • 0.5 teaspoon Salt
  • 100 grams, cubed Paneer
  • 2 tablespoons, chopped Fresh coriander leaves
  • 1 tablespoon Lemon juice

Directions

Step 1

Begin by preparing the cauliflower rice. Remove the leaves and the core of the cauliflower and cut into florets. Use a food processor to pulse the florets into rice-sized pieces. Be cautious not to over-process.

Step 2

Heat the coconut oil in a large pan over medium heat. Add the mustard seeds and cumin seeds, and let them splutter for about 30 seconds.

Step 3

Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.

Step 4

Stir in the ginger garlic paste and the chopped green chili. Cook for another 1-2 minutes until fragrant.

Step 5

Add the tomato and cook until it softens, around 3-4 minutes.

Step 6

Add turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for 1-2 minutes to let the spices bloom.

Step 7

Add the cauliflower rice to the pan, mixing everything thoroughly. Cook for about 5-6 minutes, or until the cauliflower rice reaches your desired tenderness.

Step 8

Gently stir in the cubed paneer and cook for an additional 2 minutes, allowing the paneer to absorb the flavors.

Step 9

Turn off the heat and stir in the chopped coriander leaves and lemon juice. Mix well.

Step 10

Serve the Keto Masala Bhat hot, garnished with extra coriander leaves if desired.
