Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Coconut flour
  • 1 Medium onion, finely chopped
  • 2 Green chilies, finely chopped
  • 1 teaspoon Ginger, grated
  • 10 leaves Curry leaves, finely chopped
  • 2 tablespoons Coriander leaves, finely chopped
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Baking soda
  • 0.5 cup Water
  • 0.5 cup Ghee or coconut oil, for frying

Directions

Step 1

In a mixing bowl, combine almond flour and coconut flour. Mix well to ensure there are no lumps.

Step 2

Add the finely chopped onion, green chilies, ginger, curry leaves, and coriander leaves to the flour mixture. Stir until the vegetables are well-coated with flour.

Step 3

Incorporate cumin seeds, red chili powder, salt, and baking soda into the mixture. Blend thoroughly to evenly distribute the spices.

Gradually pour in water, stirring continuously until the mixture reaches a thick, batter-like consistency. You may not need to use all of the water.

Let the batter rest for 5 minutes to allow the flours to absorb the moisture and bind effectively.

Meanwhile, heat ghee or coconut oil in a deep frying pan over medium heat.

Step 7

Once the oil is hot, carefully drop small spoonfuls of the batter into the oil, shaping them into small, round vadas. Do not overcrowd the pan.

Fry the vadas until golden brown and crisp on one side, about 3-4 minutes, then flip to cook the other side for another 3-4 minutes.

Remove the vadas from the oil and drain on a paper towel to remove excess oil.
