Ingredients

  • 2 medium Ripe mangoes
  • 2 tablespoons Unflavored gelatin powder
  • 1 cup Cold water
  • 1 cup Erythritol sweetener
  • 2 tablespoons Lemon juice
  • 1 teaspoon Vanilla extract
  • 1 cup Hot water

Directions

Step 1

Peel the mangoes and remove the pit. Chop the mango flesh into small pieces.

Step 2

In a blender, purée the mango pieces until smooth. You should yield about 1 cup of mango purée.

Step 3

In a medium-sized bowl, sprinkle the gelatin powder over 1 cup of cold water, and let it sit for about 5 minutes to bloom.

Step 4

Once the gelatin has bloomed, add 1 cup of hot water to the gelatin mixture and stir until completely dissolved.

Step 5

Stir in the erythritol sweetener and continue stirring until it dissolves completely.

Step 6

Add the mango purée, lemon juice, and vanilla extract to the gelatin mixture, and stir until everything is well combined.

Step 7

Pour the mixture into a large serving mold or individual molds as preferred.

Refrigerate for at least 4 hours, or until the jelly has set completely.
