Ingredients

  • 1 pound fresh lobster meat
  • 2 tablespoons butter
  • 0.25 cup mayonnaise
  • 1 tablespoon lemon juice
  • 0.25 cup celery, finely chopped
  • 2 tablespoons fresh chives, finely chopped
  • 8 large leaves romaine lettuce leaves
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon paprika
  • 4 small sprigs dill sprigs for garnish

Directions

Step 1

Begin by boiling a large pot of water. Once boiling, add in the lobster and cook for about 8 minutes or until the lobsters are bright red and cooked through.

Step 2

Remove the lobster from the water and let it cool for a few minutes. Once cooled, extract the meat from the claws, tail, and knuckles. Cut the lobster meat into bite-sized pieces.

Step 3

In a large skillet over medium heat, melt 2 tablespoons of butter. Once melted, add in the celery and sauté for about 2 minutes or until tender.

Step 4

In a mixing bowl, combine the cooked lobster meat, sautéed celery, mayonnaise, lemon juice, chives, salt, pepper, and paprika. Mix gently until the ingredients are well combined.

Step 5

Take one large romaine lettuce leaf and lay it on a clean surface. Spoon about 1/4 of the lobster mixture into the center of the leaf. Fold the sides of the lettuce over the lobster mixture to enclose it like a wrap.
