Ingredients

  • 2 cups Almond flour
  • 1 tablespoon Coconut flour
  • 1 teaspoon Baking powder
  • 2 large Eggs
  • 1 cup Unsalted butter
  • 2 cups Mozzarella cheese, shredded
  • 2 ounces Cream cheese
  • 0.5 teaspoon Salt
  • 1 portion Egg wash (1 egg beaten with 1 tablespoon water)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave on high for 1-2 minutes, stirring until completely melted and well-mixed.

Step 3

In a separate bowl, mix together the almond flour, coconut flour, baking powder, and salt.

Step 4

Add the flour mixture and the eggs to the melted cheese mixture. Stir until a dough forms. It will be sticky at first but will become less sticky as you knead it.

Step 5

Transfer the dough onto a piece of parchment paper and knead gently until it's well combined and smooth.

Step 6

Roll out the dough between two pieces of parchment paper to prevent sticking, into a large rectangle about 14 x 10 inches.

Step 7

Brush the top of the dough lightly with the melted butter.

Step 8

Cut the dough into 8 triangles by first cutting the rectangle in half lengthwise, and then cutting each half into 4 triangles.

Step 9

Starting from the wide end, roll each triangle of dough gently toward the point to form a croissant shape.

Step 10

Place each rolled croissant onto the prepared baking sheet. Brush the tops with the egg wash.

Step 11

Bake in the preheated oven for 20-25 minutes, or until golden brown and fully cooked.
