  • 200 grams lotus root
  • 1 medium zucchini
  • 100 grams radishes
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame seeds
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced
  • 2 tablespoons fresh cilantro
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • ice water

Directions

Step 1

Start by preparing the lotus root by peeling it and slicing it into thin rounds about 1/8-inch thick.

Step 2

Place the lotus root slices in a bowl of ice water for 5 minutes to remove excess starch, then drain and pat dry.

Step 3

Bring a pot of water to a boil and blanch the lotus root slices for 2 minutes, then immediately transfer them to a bowl of ice water to stop cooking. Drain and set aside.

Slice the zucchini into thin matchsticks and thinly slice the radishes. Set aside.
